How to Upgrade Your Mountain House Meals

Mountain House meals are built to be delicious right out of the pouch; you just add water, wait a few minutes, and dinner's solved. But sometimes you've got a handful of fresh ingredients, a little extra time, and the urge to make a great meal even better. That's what these hacks are for.

We've gathered up our favorite ways to level up almost every Mountain House meal, from Granola with Milk & Blueberries to Pad Thai with Chicken. Whether you're at home with a stocked kitchen or out in the backcountry with a stove and a spork, you'll find upgrades here that take your meal from solid to unforgettable. Start with the universal principles below, then jump to your pouch for specific combos.

Universal Upgrade Principles

Before we get into specific meals, here are six categories of add-ins that work across almost any Mountain House pouch. Keep a few of these on hand, and you can hack just about anything we make.

Fresh herbs. Cilantro, parsley, basil, thyme, rosemary, green onions — a small handful of chopped fresh herbs does more for a pouch than almost any other addition. They brighten the whole dish without changing the flavor profile. Add them last, right before eating.

Heat. Hot sauce, sriracha, red chili flakes, fresh jalapeño — if you like a little kick, a dash of heat can transform a pouch into something memorable. A squeeze of hot sauce right before serving is the easiest, trail-friendliest option.

Crunch and texture. Crushed nuts, seeds, crispy breadcrumbs, tortilla chips, croutons — Mountain House meals tend to be soft, so adding something crunchy on top is an instant upgrade. Sprinkle crunchy toppings on after the meal's rehydrated, not before.

Dairy and richness. Shredded cheese, sour cream, butter, fresh parmesan shavings — a spoonful of something rich turns a hearty meal into a comforting one. Stir in the dairy while the meal's still hot so it melts into the sauce.

Fresh produce. Avocado, cherry tomatoes, bell peppers, sautéed onions, leafy greens — fresh veggies add color, moisture, and nutrition. If you're somewhere with a stove, sautéing peppers or onions first is worth the extra five minutes.

Acid and brightness. A squeeze of fresh lime or lemon does in three seconds what half a tablespoon of fancy seasoning can't — it wakes everything up. Especially powerful on rice dishes, curries, and anything creamy.

Quick rule of thumb: add dry toppings (crunch, herbs) last. Mix wet or heated toppings (sautéed veg, cheese, cooked protein) in while the pouch is still hot. Fresh herbs always go on top at the very end.

  • Sautéed shallots + fresh rosemary for a herby, slightly fancy twist

Featured recipe: Bacon & Ranch Mac & Cheese

A few pantry ingredients turn our Mac & Cheese into a weeknight family favorite.

Ingredients:

  • 6 strips thick-cut bacon

  • 1 package Mountain House Creamy Macaroni & Cheese

  • 1 1/3 cups boiling water

  • 1 tablespoon ranch dressing

  • 1 tablespoon finely chopped chives, optional

Preheat the oven to 375°F. Place a heat-safe metal cooling rack over a cookie sheet and lay the bacon onto the rack. Bake for 10 minutes, or until crisp.

While the bacon cooks, prepare the Mac & Cheese by following the instructions on the pouch.

Once the bacon's done and cooled, chop it into bits. Top the mac & cheese with bacon, drizzle with ranch, and sprinkle with chives if you're using them. Enjoy.

Chili Mac with Beef

Chili Mac with Beef is protein-packed comfort food — pillowy noodles, kidney beans, chili sauce, and the right amount of spice.

  • Avocado + hot sauce for cooling creaminess and heat

  • Sour cream + jalapeño for a Tex-Mex twist

  • Tortilla chips + cilantro for crunch and brightness

Featured recipe: Southwestern Chili Mac Skillet

Turn two pouches into a weeknight dinner with a Southwestern spin.

Ingredients:

  • 2 tablespoons olive oil

  • 1/2 yellow onion, diced

  • 2 pouches Mountain House Chili Mac with Beef

  • 3 cups boiling water

  • 1/2 cup shredded cheddar

  • 1 jalapeño, thinly sliced

  • Pico de gallo, for serving

  • Cilantro, for serving (optional)

Warm the olive oil in a large skillet over medium heat. Add the onion and cook until soft (around 4 minutes). Remove from heat.

Tear open the Chili Mac with Beef pouches and discard the oxygen absorbers. Add the contents from both packages into the skillet along with the boiling water. Stir, cover, and let stand for 5 minutes. Stir again and sprinkle on the cheddar. Cover again and let stand another 4 minutes.

Top with jalapeño, pico de gallo, and cilantro, and enjoy.

Bucket Strategies

If you bought a bucket, you've got a lineup of different meals to work with. Here's how to think about stocking a simple "hack pantry" so you can level up whatever you pull out next.

Classic Assortment Bucket

Our Classic Assortment Bucket includes 12 meal pouches that can be eaten on the trail, at the dinner table, or stored for emergencies. With so many options in one bucket, here's what to keep on hand to hack almost every meal in it:

  • For Beef Stew: a bread bowl, shredded cheese, hot sauce, and celery

  • For Beef Stroganoff with Noodles: garlic bread, salad kit

  • For Granola with Milk & Blueberries: strawberries, yogurt, nuts and seeds, protein powder

  • For Spaghetti with Beef & Marinara: spinach, parmesan, chili flakes, fresh garlic

  • For Chicken Fried Rice: bean sprouts, zucchini, rice crackers, hot sauce

Essential Bucket

Our Essential Bucket includes 12 gluten-free, non-GMO meals with a 30-year shelf life, designed around three meals a day. Here's a pantry list that works for almost everything inside:

  • For Beef Stew: a bread bowl, cheese, hot sauce, and celery

  • For Breakfast Skillet: tortilla, avocado, black beans, green onion

  • For Scrambled Eggs: a bagel, sliced cheese

  • For Rice & Chicken: sriracha, cilantro, bell pepper, sesame seeds

Hacking at the Campsite vs. at Home

Not every hack is trail-realistic. Roasting sweet potato cubes or baking bacon is easy at home, but harder at 9,000 feet. Here's how to adapt these ideas for the backcountry.

What to pre-pack for campsite hacks: hot sauce packets, squeeze-tube peanut butter, hard cheese (keeps better than soft), nuts and seeds in small bags, dried herbs, a lemon or lime wrapped in foil. These all travel well and upgrade almost any pouch.

The universal trail hack: any rice or chicken meal plus a tortilla equals a wrap. It's the easiest way to turn a hot meal into something portable you can eat with one hand on the trail.

The stove hack: if you've got a stove, a fried or soft-boiled egg transforms almost any savory pouch. An egg on Chicken Fried Rice or Breakfast Skillet makes a good meal unforgettable.

At home, the sky's the limit. Sauté the peppers, roast the sweet potatoes, crisp the bacon in the oven, and serve your Mountain House meal on a real plate with fresh garnishes. Same pouch, entirely different experience.

What Makes Mountain House Meals Worth Hacking

Part of why these hacks work so well is what's already happening inside the pouch. Unlike most freeze-dried food companies, Mountain House fully cooks every meal in small batches before freeze-drying it. So when you add water, you're rehydrating food that was already properly cooked the first time, not cooking from scratch inside a bag. That's why the textures hold up, and the flavors stay true, even after years on a shelf.

Speaking of shelves: our pouches have a 30-year shelf life, and we back it with our 30-Year Taste Guarantee. If a meal ever doesn't taste right, we'll replace it.

Mountain House has been making freeze-dried meals since 1969, which means we've had a long time to figure out how to build meals that taste great as-is and happen to take beautifully to a little creative hacking.
